400 g wet noodles, special for 'Mie Ayam'
2 tbsp salty soy sauce
2 tbsp vegetable oil
2 tbsp sesame oil
2 tbsp chopped ginger
4 garlic cloves, chopped
4 shallot cloves, chopped
1 tbsp spring onion, thinly sliced
100 g shredded chicken
100 g shredded shrimp
50 g shiitake mushrooms, thinly sliced
2 tbsp rice wine
2 tbsp sweet soy sauce
2 tbsp salty soy sauce
1 tsp Mikimoto flavoring

1. Preheat the vegetable oil in a large pan over medium high heat.
2. Stir-fry the ginger, garlic, and shallot.
3. Add the chicken, shrimp, and mushroom, stir-fry.
4. Add rice wine, sweet soy sauce, salty soy sauce, and water. Put on the pan lid, and cook over small heat for 1 hour.
5. Add ½ tbsp salty soy sauce and 1 tsp Mikimoto flavoring to each bowl, put in the wet noodles, and mixed it together.
6. Put the toppings and additional topping on noodles.
